Home-made Noodle

For all the Indonesian Who do not even try / know Mie Ayam? Mie Bangka? Mie Medan, etc kinds of things. 
While you away from home, that was the most things that i want to eat after i'm home, cause the taste of this noodle will not be the same like wanton noodles in Malaysia and singapore. This noodle has difference taste from Wanton noodle. So here for all the Bloggers, food Lovers,  and all the travelling students.. I gave some recipes that you guys can follow to make while you are away from home.


Ingredients Mie ayam

Noodles Dough:

1. Bread Flour : 400 g
2. Semolina Flour : 100 g ( the best for make the color yellow or can replace with egg yolK)
3. Water approximately 200 ml
4. Salt    : 10 g
5. Sodium Carbonat ( Na2CO3) : 4 g ( normally people called it  Ki water/ soda ash/soda Kie S/ Soda Kie [sodium bicarbonate] S+soda Kie P[ sodium bicarbonate])
6. oil       3tbsp

Meat Filling : 
1. Any meat u like Chicken/ beef/ pork
2. garlic Chopped
3. Shallot Chopped
4. Sesame oil For non-Muslim
5. Oyster sauce
6. Mushroom ( Button Mushroom but prefer Shitake Mushroom)- Cut
7. Ketchup ( sweet soya sauce or can use light soy sauce)
8. Seasoning ( salt & pepper)

Garnish : 
Spring onion [ Minced nicely] 


Methods of Preparation : 

* noodle : 

1. Mixed all the ingredients together, and knead the dough. {tips : do not over knead the dough cause it will break the gluten strength of the dough and will make the noodle dough easily to break)

2. Rest it 20 mins [ the best time is overnight]

3. Rolling time : make sure the noodle ready to be rolled in meaning that elastic, not stick to each other layer.

4. Cutting  : cutting can be done by pasta machine that we can adjust the size up to our likes, or if don't have any pasta machine, what we can do is just roll it as thin as possible, folded and cut it in thinly size to make sure the noodle in the same thinness, do  not cut into small sizes.

5: Finishing : Cover with flour, to prevent the stickiness from the dough. 


  • Filling Preparation : 
1. Saute garlic and shallots2. add in the meat you used ( chicken/ beef/pork meat)
3. add in the soy sauce,seasoning and the oyster sauce.
4. add in Mushroom and cook until the meat is cook well. 
5. Put the meat on the top of noodle and slice nicely the spring onion for garnish only 

Serving method : 
1. sesame oil/ any oil light soy sauce, salt, and pepper on the plate
2. cooked the noodles in the boiling water after 1-2 minutes soaked the noodles in the sink water / plain water( in purpose to wash all the stickiness from the flour during cooking proccess )
3. Dry the noodles, put in the plates together with the oil and seasoning added in the plate/bowl.
4. Serve together with the meat that you cooked before.
5. Mie ayam ready to serve and eat..
6. Bonne appetite
